Aware that, to stand out from its numerous competitors, Nicolas Alziari had to provide carefully elaborated olive oils for his prestigious clients and so travelled across Europe to find rare varieties of olives, matching perfectly to the French Riviera local variety (Cailletier).
This oil is smooth and delicate, with a savoury aroma which has notes of black olive. In the mouth it has very little bitterness, with a warm hay-like note and creamy almond flavour.
